Cedar Summit Farm, New Prague, Minnesota
Dave and Florence Minar have been practicing rotational grazing since 1994, raising approximately 170 cows including Holsteins, Jerseys, Guernseys, Ayrshires and Brown Swiss on 470 acres. Along with their children, they operate their own on-farm processing plant and farm store at Cedar Summit Farm, where they sell cream-line milk, ice cream, and a lot of other goodies including PastureLand butter and cheese.
Their products are also available at co-ops, grocers, and restaurants throughout the Twin Cities metro area. The milk that is not used in production of their own product line is marketed through the cooperative.
