Why Is There No Butter or Cheese?

PastureLand Summer Gold organic butter and cheeses are out of stock at this time. For background on what’s been happening click here and here. We are in the midst of reorganizing and hope to start making cheese again in summer 2012.

Butter is going to be harder – we still have not found a long-term partner who can utilize the organic skim from butter production. It’s not buttermilk, and it’s not whey – both of those would be relative easy to sell. It’s nonfat milk, typically used in cutting the amount of fat in fluid milk, or for making kefir, yogurt or lowfat cheese, and milk markets just aren’t looking for more nonfat skim right now. We’ve tried drying it for powdered milk, condensing it, using it to make organic Milk Protein Concentrate, and selling it as fluid, but just can’t make things come together. Without a longterm solution we will not be able to churn butter.
